Vermicelli and Semolina Idli

Vermicelli ( semiya) and Semolina(Rava ) Idli is one of the healthiest breakfast recipe. It is made of complex carbohydrates and protein, steamed and very less oil is used. When served with sambar, it becomes a perfect breakfast, healthy and sumptuous.
The greatest advantage of this Idli is that it can be prepared instantly. No need of grinding and fermentation.
It’s a very handy recipe when you have sudden guests.

Ingredients
Roasted Vermicelli- 3/4 th cup
Roasted Rava( semolina)- 3/4 th cup
Yogurt- 2 cups
Onion( finely chopped)- 1
Oil- 2tbsp
Mustard- 1 tsp
Urad dal- 1 tsp
Chana dal- 1 tsp
Cashew nuts- 1 tbsp
Hing- 1/4 th tsp
Cooking soda- 1/4th tsp
Coriander leaves( chopped)- 1 tbsp
Salt to taste

Method
Heat oil in a pan.
Add mustard. When it starts spluttering, add urad dal, chana dal, hing and cashew nuts. Sauté till the dal becomes golden. Add chopped onions and salt. Sauté till the onions turn pink.

Add the roasted rava and vermicelli. Mix well. Take off from the gas.

Now add well beaten yogurt to this and mix well. Add coriander leaves and mix again. Let it rest for 10 mins.

Heat water in a steamer. Grease Idli plates and keep it ready.
Once the water starts steaming, add cooking soda to the batter and mix well. Batter will become light and frothy.

Pour the batter into greased Idli plates and steam for 12-15 mins or till done.
