Oats, Besan and Carrot Mini Pancakes

This was our breakfast at home today.
When I opened the fridge today, the the first thing I saw was red carrots. I was not on a mood for carrot Halwa or any sweet. It was time for making breakfast. Wondered what could back made using carrots. First, I thought of carrot Besan Chila( instant dosa made of besan). As I was taking out besan and rice flour, had this sudden idea of adding oats. This is something that was created at that moment- an instant and a healthy pancake.
It came out well. My daughter really liked it. She said it was tasting like French fries, crispy on the outside and soft inside:)
I had served the pancakes with spicy yogurt coconut green chutney.

Ingredients

Oats- 1/4th cup
Besan- 1/4th cup
Rice flour- 1/2 cup
Grated red carrots- 1/2 cup
Salt- to taste
Hing- 1/4 th tsp
Water – 1 and 1/4 th cup
Red chilli powder( optional)- 1/4th tsp.

Method.

In a bowl, add oats, besan, rice flour, salt, hing, chilli powder( optional) and the water. Mix well. There should be no lumps.
Rest the batter for 15-20 mins.
Before making the pancakes, add half cup of carrots to the batter and mix well.

Heat the mini Othappam tawa.
Apply little oil.
When the tawa becomes hot, pour a spoonful of batter in all compartments. Pour little oil on the sides and top of each pancake. Close the tawa with lid and till the batter become dry on the top.
Turn them gently. The downside part would have become crisp and golden.

Cook till it becomes crisp on the other side too. Transfer to a serving plate.
Serve hot with any chutney or ketchup.
I have served with Green yogurt chutney:)
