Peas and Badam Kachoris

 

Yesterday I bought some mangoes. While buying I decided that  the breakfast for today will be puri with aam rus. It’s one of my very favourite breakfast.
Since I had fresh peas too, I thought of making peas puris. Somehow, that idea led to kachoris. This is the first time am making kachoris. I was checking the net for recipes.
I found Chef Sanjeev Kapoor’s to be very interesting. I have followed his recipe with few changes to make it more healthier.
I was very happy with the results and my family really enjoyed the kachoris:)
 
Ingredients

 

For the filling
Boiled peas- 3/4th cup
Almond flakes- 2 tbsps
Finely chopped green chillies- 2 tsps
Finely chopped ginger- 1/2 tsp
Garam masala- 1/2 tsp
Jeera- 1/2 tsp
Oil- 2 tsps
Chopped coriander leaves- 1 tbsp
Grated coconut- 1 tbsp
For the outer dough
Whole wheat flour- 1 cup
Ghee- 1 tbsp
Ajwain ( omam)- 1/2 tsp
Salt to taste
Cold water to knead the dough.
Oil- as much required to fry the kachoris
For the filling
Heat oil in a pan. Add jeera. When it starts spluttering, add chopped green chillies and ginger. Sauté for few seconds and the add the boiled peas.
Add salt to taste and garam masala powder. Mix well and sauté for few mins. Gently mash the peas with the ladle.
Crush the badam flakes. Add it to peas mixture. Mix well and sauté for few mins.
Take off the flame. Add chopped coriander leaves and grated coconut. Mix well and keep it aside.
 
For the dough
To the whole wheat flour, add ajwain, ghee and salt to taste. Mix well with your fingers till it resembles bread crumbs.
Add cold water little by little and knead the flour to a stiff and smooth dough.

 

To make the kachoris
Heat oil in a pan for deep frying.
Divide the dough into equal portions (8).
Grease your hands with little oil and roll each portion into a ball. By doing this, you need not dust it with flour to roll into puris.
Take one ball. Roll it into puris. Keep some filling in the centre. Gather the dough all around, close the filling completely.
Gently pat with your hands to spread the filling inside evenly and then gently roll into a puri again.
 
Deep fry in the oil. Cook on both sides till it turn golden.
Drain the excess oil and serve hot with chutney of your choice/ Ras Aloo/ Aam Rus.
I have served with cool and delicious Aam Rus.
To make Aam Rus
Grind the mangoes with sugar to taste to a puree. Chill and serve.
