Cheesy Paneer Cutlets

After a very long time, made a tea time snack for my daughter. I had some boiled corn and potato and home made paneer. Interesting ingredients to make cutlets.Since all the ingredients were available, made this yummy cutlets in a jiffy:)

This is a perfect snack to pack for school tiffin, kids parties and a good snack to enjoy during monsoons:)


Ingredients

Crumbled paneer – 1 cup

Boiled fresh corn – 1/2 cup

Boiled and mashed potatoes- 3/4th cup

Rice flour – 2 tbsps + as much required for dusting.

Sesame seeds – 2 tsps

Red chilli powder – 1/2 tsp

Jeera powder – 1 tsp

Dry mango powder – 1/4th tsp

Garam masala powder – 1/4th tsp

Salt to taste

Ghee or oil- as much required for shallow frying.

For the stuffing

Grated mozzarella cheese – 1/2 cup

Method

In a bowl, add the paneer, corn, mashed potatoes, rice flour, red chilli powder, jeera powder, dry mango powder, garam masala powder, sesame seeds and salt.

Mix everything well and knead to a smooth dough. Rest the dough in the fridge for sometime.


Divide the dough and grated cheese into 6 portions.

Grease your hands with oil or ghee.

Take one portion . Shape it into a smooth ball. Make a dent in the center. Fill it with one portion of cheese. Cover the cheese completely, roll again into a smooth ball.

Flatten the ball gently to give shape to the cutlet. Dust it with rice flour. Make 5 more cutlets similarly.


  

Heat a tawa. Spread some ghee or oil and shallow fry the cutlets till both sides turn golden brown. Cook it on a medium flame to ensure that the cheese inside gets cooked as well.


Serve the cutlets hot with tomato ketchup or chutney of your choice:)
