We had a simple, easy to make, wholesome and our family’s favourite lunch at home today:)

Menu for today’s simple lunch at home


Potato roast

Avarekai rasam ( broad beans rasam)

Salad

Fresh mango pickle

Rice

Yogurt

Peanut chikki

Potato roast


Ingredients

Baby potatoes- 1/2 kg

Oil – 2 tbsps

Mustard – 1 tsp

Urad dal – 1 tsp

Sambar powder – 2 tsps

Hing – 1/4th tsp

Curry leaves – few

Salt to taste

Method

Wash and pressure cook the potatoes for 2 whistles.

Peel the potatoes and cut into two.

Heat oil in a pan. Add mustard. When it starts spluttering, add urad dal, curry leaves and hing. Sauté for few mins and then add the boiled potatoes. Mix well. Add sambar powder and salt to taste. Mix well again and cook till the potatoes become crisp and golden.

Serve hot with rice and rasam/ sambar.

 

 

Fresh mango pickle


Ingredients

Chopped mango ( semi ripened) – 2 cups

Sesame oil – 2 tbsps

Mustard – 1 tsp

Fenugreek seeds – 1/2 tsp

Hing – 1/8th tsp

Turmeric powder – 1/4th tsp

Red chilli powder – 1 tsp

Salt to taste

Method

In a bowl, add the chopped mangoes, turmeric powder, chilli powder and salt to taste. Mix very well.

Heat oil in a pan. Add mustard. When it starts spluttering, add fenugreek seeds and hing. Sauté for few seconds and add the tempering to the mangoes. Mix well. Check for the seasonings. Let the pickle rest for few mins.

Serve the pickle with rice and yogurt:)
