Onion and Cashew Pakoda

Its raining in Chennai for the past two days. I love rains and am thoroughly enjoying the weather. My son wanted to eat onion pakodas. As it has been really a long time since I made pakodas,couldn’t say no to him.

So, I made onion and cashew pakodas. It was crispy, crunchy and super yummy:)

Ingredients

Finely sliced onions – 1+1/4th cup
Cashew nuts – 1/2 cup
Besan ( bengal gram flour/ kadala maavu ) – 1/2 cup
Rice flour ( arisi maavu) – 1/2 cup +1 tbsp
Curry leaves – 1/4th cup
Red chilli powder – 1 tsp
Hing( asafoetida/ perungayam) – 1/4th tsp
Salt to taste
Hot oil – 4 tbsps

Oil – as much required for deep frying

Method

Add sliced onions, cashew, besan, rice flour, red chilli powder, curry leaves, hing and salt in a bowl and mix well. Add little water and make a thick batter.

Heat oil in a pan for deep frying. Add 4 tbsps of hot oil to the batter and mix well.

Pinch a small amount of batter and drop into the hot oil. Deep fry till it turns golden and crisp. Similarly, make pakodas with the rest of the batter.

Serve the pakodas hot with ketchup or chutney of your choice:)
