Curry Leaves Paneer Tikka Burger

I am very fond of watching cookery shows on TV. In one such show, I saw this recipe of curry Leaves Paneer tikka,a week back. I found it to be very interesting and a innovative way of adding curry leaves in a dish. I couldn’t wait to try the recipe.
I made it the next day itself for breakfast and school lunch box.
Since paneer tikka alone would not be enough for breakfast, I used it as a stuffing for burger.
The tikka came out very well. Curry Leaves added a very good crunch and rustic flavour to the soft tikkas.
Needless to say, it adds great nutritive value to the dish.
It’s very rich in iron, calcium, magnesium, vitamin C, A and B, antioxidants and flavonoids.
Adding in paneer tikka is an excellent way to include curry leaves in kids diet as you can find hardly any child who eats curry Leaves willingly.

Ingredients
Burger buns – 6
Paneer – 200 gms
Onion – 2
Tomato- 1
Cucumber – 1
Butter – 3 tbsps
Oil – 2 tsps
Cheese spread- 1 tbsp
For the marinade

Curry leaves – 1/4 cup tightly packed
Yogurt- 5-6 tbsps
Cheese spread – 1 tbsp
Cumin powder ( jeera)- 1 tsp
Amchur powder ( dry mango)- 1 tsp
Chat masala – 1 tsp
Red chilli powder- 1 tsp
Turmeric powder – 1/4th tsp
Sugar – 1/2 tsp
Salt to taste
Method
To make the marinade

Wash the curry leaves, drain and dab it with a clean cloth to remove the moisture.
Dry roast the leaves till it turns crisp and make a coarse powder.
Add the other ingredients mentioned, mix well to make a smooth mixture.
Cut paneer into cubes and coat it well with the prepared marinade. Let it rest for 30- 45 mins.
Slice the onions. Heat oil in a pan. Add the onions and a pinch of salt and sauté till it turns golden. Keep it aside.
Peel, wash and slice the cucumber.
Wash and slice the tomato.
Heat a tawa. Add butter and toast the burger buns.
Add butter again and shallow fry the marinated paneer.
To the remaining marinade, add a tbsp of cheese spread and mix it well.
To assemble the burger

Spread some marinade on the bun.
Arrange tomato and cucumber slices.
Now place 2 paneer tikkas and top with it sautéed onions and some marinade.
Close it with other half of the bun and serve.
