Yam, Sweet Potato and Green Apple Stew

This is my own creation, inspiration from a South African recipe which I saw in a tv show, The Global Menu by chef Ranveer Brar. I don’t remember the name of the dish though. The dish was made with green apple, yam, sweet potato, chicken, eggs and milk. I was very fascinated to see apple and yam being cooked together in a dish, something which I have never seen before. I was very curious to know how the flavour would be. So I have tried and created a vegetarian version of that dish.
The stew came out really well. The green apple gave a good crunch and a punch to this creamy stew. Everyone at home loved it and I hope you all would like it too:)

Ingredients

Chopped yam – 1 cup
Chopped sweet potato – 1/2 cup
Green apple – 1
Onion – 1
Crumbled Paneer – 1/2 cup
Fresh cream – 200 ml
Milk – 1/2 cup
Oil – 1 tbsp
Fennel seeds ( saunf/ sombu)- 1 tsp
Cumin seeds( jeera(- 1 tsp
Green chillies- 2
Hing ( asafoetida/ perungayam)- 1/4th tsp
Turmeric powder – 1/2 tsp
Chilli powder- 1 tsp
Cumin powder – 1 tsp
Coriander powder- 2 tsps
Chopped coriander leaves – 2 tbsp
Lemon juice – 2 tsps
Salt to taste
Sugar – 1 tsp
Method

Peel, wash and chop onion.
Wash and chop the green apple.
Wash and slit the green chillies.
Heat oil in a pan. Add fennel and cumin seeds. When it starts spluttering, add hing and green chillies. Sauté for few seconds. and then add the chopped onions. Sauté till it turns pink.
Add the chopped green apple and sauté. for few mins.
Now, add the chopped yam and sweet potato and mix well.
Add turmeric powder, chilli powder, coriander powder, cumin powder and salt to taste. Mix well and add 1/2 cup of water.
Close the pan with a lid and cook till the vegetables becomes soft.
Now, add paneer, sugar and milk and mix well. Check for the seasonings. Cook for few mins and then add the cream. Mix well, check the seasonings, reduce the flame and let it simmer for few mins.
Switch off the flame and let it rest for few mins.
Add the lemon juice and mix well.
Garnish with chopped coriander leaves and serve the stew hot with steamed rice/ pulao/ roti 🙂
