Tomato Poha

Whenever I have to cook something quick for any meal, the first ingredient that comes to mind is, poha. One can make a sumptuous dish in 15-20 mins with this humble, versatile poha.
Few days back, I had made this dish Tomato Poha for breakfast. I had actually planned to make only oats porridge for breakfast that day. But my daughter had no mood for that. She wanted something spicy. I didn’t have any idli or dosa batter too. Poha was the ingredient that immediately came to my mind.
She is not fond of usual poha upma. Poha can be easily substituted for rice in many recipes. She is very fond of tomato rice. So, I quickly decided to make this tomato poha.
It is a very simple and easy to make dish, yummy and a healthy breakfast and my family loved this tomato poha 🙂

Ingredients

Poha ( rice flakes/ aval) – 1+1/2 cups
Onion – 2 medium sized
Tomato – 3 medium sized
Green chillies – 2
Curry leaves – 2 sprigs
Oil – 1 tbsp
Mustard – 1 tsp
Split urad dal ( black gram/ullundhu) – 1 tsp
Chana dal ( bengal gram/ kadala paruppu) – 1 tsp
Sambar powder – 1+1/2- 2 tsps
Chopped coriander leaves – 2 tbsps
Method

Wash poha well. Sprinkle little water on the poha and soak it for 10-15 mins. Fluff it gently and keep it aside.
Peel, wash and chop onions.
Wash and chop tomatoes, green chillies and curry leaves.
Heat oil in a pan. Add mustard. When it starts spluttering, add urad dal, chana dal, green chillies and curry leaves. Sauté for few seconds.
Add the onions. Sauté till it turns pink. Add the chopped tomatoes, salt to taste and sambar powder. Mix well and sauté till the tomatoes turns soft.
Now add the poha and mix gently. Cook on a high flame for a min and switch off the flame.
Garnish with chopped coriander leaves and serve the poha hot with raita:)
